hey all iam cheesemaker from lebanon i make all kind of white cheese  and laban or yogurt i have dairy farm in lebanon and i want to have information on how to make yellow cheese mozzerlla and kashkaval....
if u need any help on white cheeses dont hesitate to ask thx.....

Ahlan (welcome) Amin to this forum!

You are our first member in Lebanon (so I've just added Geographic board for it in case anyone has any Lebanese specific posts).

My family and I are mostly Canadian and Lebanon is a country very dear to us as we lived next door in Damascus, Syria between 2001-2004 and made many weekend and longer holidays to your wonderful country. Ski hills, promenade down the Corniche in Beirut, Bakaa Valley Wineries, ruins of Baalbek etc etc but never met a dairy farmer there ;D!

If you search this forum you'll find a Thread on Kashkavel and I think a recipe. Lots of info in the Pasta Filata board on Mozz. Looking forward to your advice on brine preserved cheeses, you'll find lots of Theads on them. How much are you making?
