Anyways -
get some sweet short pastry and cut into square shapes the same size as your gem/mini muffin trays
place one in each and bake until cooked. This is your base
You can then freeze them or use fresh
Mix to your taste, some lemon curd and cream cheese (quantity is really down to personal taste - start with a small amount of lemon curd and slowly add in, until you get a lovely creamy lemony taste)
spoon into cases and serve
just brilliant if you have unexpected visitors you want to impress. Grab someout of the freezer, mix and serve!!!
