I don't know if I misunderstood this but mozzarella will snap when cold - it only stretches when it's hot.

After making it the second time -- and reheating over and over -- I now understand this.  And that video that was posted makes more sense; that brine must've been hot (135+ degrees)!

I need to try to brine it next time, or add some flavors.

They were great hits at the party the other night (along with the cream cheese).  Interesting how the mozz started to yellow as it stayed out.

I made it a 3rd time, but this time, others wanted to see it, so I made it before going out for NYE. 

Time to figure out what to make next...I'm still having trouble figuring out what cheeses I can make without buying a new fridge to maintain temp.

You could try a cooler? Not sure about the temperature where you are but sometimes a frozen milk bottle of water in a cooler in the winter is enough.
