Gouda - Using Beer?

In former days (abbey)beer was used for making cheese. My problem is that I do not know in which phase of the production - and under which circumstances - beer was involved during the process. And what kind of beer was used? Maybe someone can help me.

While the yeasts are pretty specific nowadays for brewing beer, I'd be worried about the fermentation going on in the cheese.. Then again, fermentation is what its all about, albeit at a highly controlled pace.
