I used agricultural nozzles that screw into PVC pipe.  I think they were 4 micron.  The water had to be fitlered to ensure the nozzles wouldn't clog.  It worked well but I ended up having to add a lockout so when the fan ran on the cooler the humidity wouldn't come on.  The cold, dry air gave me flase triggers and the mist would blow against shelves of cheese.

very very nice setup.  I was just on the verge of getting a couple of phidgits for the same purpose.  Now I need to take another look.  congratulations and thanks for the ideas.

I didn't know about phidgets.  The boards look pretty cool.  Arduino is definitely cheaper though.
