What to do with a Gallon of Rotten Milk?

... besides tossing it in the garbage...

It's whole past/homog milk, expiration date was three days ago. Found it at the back of the fridge.

It is starting to turn rotten, but it isn't quite too rotten yet.

Any suggestions as to a cheese I could make with it? I was thinking blue cheese, cause it already has the smell to it... but...

Do you mean acidic or rancid? If rancid, pour out, if acidic, make a cheese that does not need to age for long. A paneer, for example. If the pH is not too bad (not below 5.8), you can also try a frying cheese.

My mom used to make sorta condensed milk when the milk got old. She added sugar, vanilla, and boiled the ell out of it until it got thick like caramel.

I did see Paula Deen deep frying cheese once, and it seemed quite easy.
