Cut Open my Colby Jap and traded it for Cherry Wood

Well a buddy of mine at work just cut a bunch of cherry and hickory trees and I traded half a wheel of my 9.63 pound Colby Jalapeno cheese for a trunk full of wood. He cut them in slices for me so I can pile them neatly and just break them up with a hammer when I need to use them.

The cheese was too big for a standard 11 inch vacuum sealer bag so I made a bigger one by slicing it down one side sealing two bags together side by side and resealing the edges. Tricky but it works. I have a tutorial here somewhere.

The the second photo is before cutting.

Then I tried using one of those cheese wire things to cut it in half and I was a bit crooked on the end. It was just long enough to press with the tip on my fingers. It’s very creamy. Sure can tell this was raw milk. This should be great smoked!

In case your wondering I cut it this way becuase everyone at work gets so excited seeing a round wheel of cheese. I trimmed it up and it looks great at work. It was carried all over the building like someones new child with all the oos and ahs appropriate to a new baby. I got a kick out of that!

Great looking cheese Debi, but just to let you know, I would give you cherry (I don't have hickory) for nothing because I make cheeses by myself  ;D ;) ;D

I could have got it for nothing but I wanted to reward him for all the work he did slicing it up into discs for me. That was alot of extra work and I appreciated it. He a really good guy. Lots of people take advantage of his good hearted nature. The last time I got wood "free" from someone I couldn't move the logs - I had to go buy a chainsaw!
