Once cheese is waxed, does it still need to be stored at relatively high humidity or will a cool environment be enough.
E.g. is the wax impermeable to air as to prevent the cheese from drying out?

Yes, that's part of the point of waxing - humidity becomes a nonissue. If you wax, focus on keeping the temp at 50-55F, with as little fluctuation as possible.
