My cheese started swelling 1 day after waxing. What have I done wrong. It is supposed to be Colby.

Uh, I think so... Maybe a little damp. DH said it was time to wax, but I think we waxed too soon? I used to make cheese years ago and I let it form a rind for 1-2- weeks THEN waxed. It had only been drying 3-4 days in humid conditions.

Ivy - I typically air dry any of my wheel ~ 5 days before I wax them. I have not had that problem. Other than not being dry enough you could have had a contaminant that was gas producing making eyes in your wheel. What starters did you use?

We used mesophilic starters, direct set from New England supply
