If a few batches of chevre count, then hello from La Salle County.
I'm reading and studying and keep hoping to find the time to make more cheeses.
I get Guernsey milk from a farmer near Dixon and goat's milk from a farmer south of Rochelle.

:)Here in Southern IL Johnson Co. Making Butterkase and Feta out of cow's milk pasteurized and some homogenized. Lookinging into Goat Milk too!!
