I had about half a gallon of milk leftover from another cheese. It wasn't enough to make anything big, and my camembert molds were already in use, so I decided to make a simple fresh paneer. Unfortunately, I had no yogurt, and the only lemon I had was needed for dinner. I did, however, have some grapefruits, and seeing as they are in the same family as lemons, thought it would be an acceptable substitution.
I hadn't really made any fresh cheese before, except ricotta from whey leftover from hard cheeses. The paneer was so quick and simple; it was completely done in 6 hrs. And delicious. My girlfriend and I nibbled it away to nothing in a few days. I didn't put any herbs or anything into it, but it did have a subtle grapefruit flavor that was very nice.
