That all depends what type of cheese you want to make :)
You can make simple cheeses with just lemon juice.

Here is a link to the recipes on the main page. Here is the one for paneer which uses the lemon juice. Queso Fresca is the same except it uses vinegar. I would start with these. Good luck.

Here are some videos on making paneer.  It is tasty and easy.
