Cheese Fresh Out Of Press - Bitter & Plastic Taste

I made my very first cheese yesterday. Everything seemed to go well and I was excited when I took it out of the press this morning. I made Colby and my cheese mold is homemade from PVC. I trimmed a small taste of the cheese and BLEK! It is bitter and tastes like plastic. I am ordering a mold today. Did I waste a whole day or is this what fresh made Colby tasres like? There was no cheese taste at all. Oh, I used fresh cow's milk. I think I'm entering the first stage of depression.

I use pvc hoops and I have never had that problem.

The PVC is not the problem. Fresh cheese is usually acidic and bitter tasting. You need to let the cheese age for at least 60 days or more and then taste it.
