Not the best of my cheeses -- but this is my first Emmental! While a bit lopsided, it has swelled on the sides and the top and bottom!! I'm pretty psyched!! I had to leave it for a few days to tend to a family emergency -- and so it wasn't turned regularly and it had a mold episode -- but it in my mind it is looking good. It's now bagged and back in the cave (it was out for 3 weeks) -- now the WAITING begins!!!
