Canandian Cheese

This past weekend I attended the Star Chef Congress in NYC, while I was at the show I stumbled across a both from CDA inc based out of Noyan.  They were featuring cheese created by Fritz Kaiser.  Unbelievable stuff.  They had a cheese called Le Douanier, a semi soft cheese with a wased rind.  It is ripened for 9 weeks and a line of vegetable ash running through it.  It has great earty aroma and the taste has hints of nuts and green apples.  If you ever get a chance to try this I highly recomend it.

Hi Merlin and thanks for this.  What is vegetable ash?  Do you think that the flavours could have come from the ash?   I know that ash is used to lessen the flavours of goat cheese, so was this a goats cheese?
