thanks for the info H-K-J. that is what I was thinking but wasn't sure. I am going to try vac sealing some of my next Stilton it is 8 weeks old now but my cave is a little cool.

I wish I had your trier so I could get a better look at mine,
the vegetable peeler is showing blue in the center of my eight week old but I will check one more time before I decide to cut and wrap. :-\
