Double Gloucester recipe?

I just bought (evening here) 11 liters of raw milk and I want to buy some milk in the morning to make a Double Gloucester.  But I can't find a recipe on line or in any of my books.  Anyone got one handy?

"Cotswold Cheese is a Double Gloucester cheese with chives and Onion added."  (Just leave out the chives and onions. G.)


There is also a recipe for a straight DG cheese in 200 Easy Homemade Cheese Recipes, but that doesnt help if you dont have the book.

Since it's a "Double", that means you have to make 2 and share one with a friend. ;D

Personally I like it better with the onions and chives!  ;)
