Pressing Stage Ending In Middle Of Night?
« on: September 29, 2008, 06:14:12 PM »
When making my cheese at the final pressing 12hrs the time is about 1pm,so that means that i have to get up in the middle of the night to take the weights of.is it OK to leave the weights on till  i get up 5.30 6am.or will the extra few hours effect the final product?

I just leave mine in the press when I'm in that situation. Good Luck.

Same here, leave in until morning, you could lighten up the weights a little if you want. I find how you age the cheese and rate of drying to be more important than weight and duration pressing. Have fun!
