Gruyere Rind?

Any idea how to get the nice grey rind on a gruyere? Other than being in the appropriate country with an authentic cave with resident molds...... would a ripening culture of some sort help?

I see this is an old post that didn't get any hits. Well, I'll still give my 2¢.  What you could do is to find the cheese rind that you like at the store, buy a piece and blend it up with some water, and wash your cheese with it.  The other is to be super patient and let nature take its course.  Once the rind has properly developed, just let what grows grow and don't wash the cheese for a while.
