I have a pouch of Choozit TA61 LYO 125 DCU. In this post (http://cheeseforum.org/forum/index.php/topic,564.msg3155.html#msg3155) Cartierusm weighed and measure the volume in the package of Choozit TA61 LYO 50 DCU, which came to .25 oz (7.09g) and 3.75 tsp - 1.89g per teaspoon.

My package says it contains 27.2 g of culture - is it safe to assume that it contains 27.2/1.89 = 14.4 tsp of culture? I can already see that my culture weighs more than 7.09x2.5=17.725g which I guess would mean that I need to use more of it than .14 tsp per 5 gallon batch. If the density of this particular culture stays the same across the batches I could just calculate the amount needed by volume using the given example, but if it varies I'm in trouble as I don't own a scale accurate enough to weigh such small amounts.
