I didn't know where else to post this but I thought some of you might find it interesting.  They were supporting a booth at one of the shows I was at and it looked real interesting.

Made me realize on the website Links pages I had no Courses Page so I just made one. I started with your Vermont Course and researched and added several others!

Anyone find any I'm missing please let me know, also anyone been on a course and can say good/bad recommendation or describe what you do on such a course?

There are some cheesemaking classes at Oregon State in Corvallis.  Here's a link to a recent news article:

I think Peter Dixon has these affinage classes a couple of times a year. Let me know if you are interested, I may be able to get a few people together to do it

i did the affinage class last year. peter is a great instructor and i plan on taking his advanced classs in the fall. so much knowledge to share. v

Thanks! I just love his cheese and I think he is a brilliant affinieur. We have some mutual friends and I have been waiting for an intro at the farm for a while now. Missed out on it last year.  How long was the class? Was it at his VT farm?

There will be some classes held in Michigan.  The classes will cover soft cheese, feta, Mozzarella and pressing and making hard cheeses.   Contact information below
