Oil Marinating Feta (Or Mozz) - Brine First?

So I want to marinate some feta in olive oil and herbs/garlic etc. Also want to do that with mozz. The question, do you brine the feta first for awhile and then put into oil mix, or can you just directly put it in oil and bypass brine for feta (let sit in fridge a bit for mozz)?

Did you salt the feta?  I would personally brine first then immerse in olive oil/spices.

I would definitely brine the feta first, as that is how it becomes true feta. I marinate in a olive oil, a tablespoon of honey and fresh herbs. It's great. If you are going to marinate fresh mozz, make certain it is well drained (the feta, as well). Also, do not use fresh garlic in the olive oil marinade as it can form botulism.

Thanks for the info! fresh garlic would be alright for a short time though maybe? Just eat within a few weeks or so?
