OK , I know I'm ressurecting a very old thread , but just found it while doing some research on the same subject.
Here it is , Canned Blue Cheese , a kind of Stilton actually , one of my own design.
I have been looking into canning cheese over the last few months , and have visited some of the canning and survivalist forums wher people have been canning all kinds of cheese with great success , so I finally decided to try my own.
I water bath processed this for about 30 minutes , the new texture is exactly what I like , it is spreadable on toast , kind of like a thick peanut butter , the taste did not change at all , a success I would say.
This one is just a test to see how it would survive the process.
The next one I can , will be done in a pressure canner and kept long term to see how it ages in the jar , I have heard from others that it continues to age and develop more flavor , so I will report back on that when I have some results.
I will be doing more of this , it's kind of like opening a jar of cheez whiz , but it's real cheese !
