Hello! I'm new to making cheese. I'll probably be making my first batch tomorrow!

We get about 4 gallons of milk a month as part of our cow share (raw milk can't be commercially sold in WY for some silly reason) and I've made yogurt so far.

I'm especially interested in making raw cheeses.

Good afternoon Babywearer and welcome to the forum.  Just wondering if there were some special raw milk cheeses you wanted to make, or just cheese in general using raw milk.
Most of the cheeses I make I use raw milk, as I am spoilt to have a great source for it.
Hope to hear of your adventures into cheese making.
BTW how old is the baby you're wearing?
