Good Day Folks;

I am interested to know if anyone has seen or knows of a used Cheese on Wheels system by http://www.ddsco.com/index.cfm?event=pageview&contentPieceID=1399&parentid=1399?

That'd be hard to find, there aren't too many of them that have been made (they're custom builds).

You can build one yourself, though. Might not have all the fancy features like collapsible brine tank, but it's not too hard.

Wish I knew, I want one too.  You could probably build one, as was mentioned.  You'd still want to keep in touch with your health inspector during the build.  Oh, there was a steam on demand unit that was discussed on the forum, could be helpful in this situation.

Applying to all the food safty regulation seems tricky, Ive seen portable butchering cars in the US and they must have a food inspector right beside them. I suppose cheese regulation is not as harse but you will need to line the entire truck with some sanitizable matirial.

I believe Darlington Dairy Supply here in Wisconsin sells a cheese on wheels unit.
