Feta from Goat's milk

Made our goat's milk feta last night.  Came out GREAT!!!!!  We made several mistakes but it came out fine. (page 185 Ricki Carrol book)
     Recipe called for CaCl before beginning to warm and then the Rennet after an hour at 86 degrees.  We read it wrong and diluted them together and added them both at 86 degrees and then added the starter. 

     Recipe said to let it hang and drain 4 hours but since it was late we left it overnight.  PERFECT!!!  Was sweet tasting and cut nicely.

We now have out cubes soaking in brine in the fridge.  We'll leave them for 30 days and see how they taste.

Next goat's milk in two weeks....we hope.

Hi Frank my recipe also drains over night, so I don't think it would have compromised the cheese.
Great to see you made it.  Fetta is one cheese that we use the most, and I need to make some more today, as we have almost finished the last block.
Would love to see some photo's of your finished product.

Hey all.  I'm brand new to the forum and have been making goats milk feta for the last few months.  I have a small Nigerian dairy for home use and can hardly keep up with all of the milk.  My favorite fetas have a pretty distinctive flavor.  I like them full of flavor.  I've tried the brined and also the aged at room temp for 3 days.  I prefer the 3 day method.  The other comes a bit too salty for my taste.  I just made my fourth cheddar and my first monterey jack (using goats milk).  Its very high fat so in a couple of months I'll let you know how it turns out with higher fat.  Calgal.

Hi Calgal and welcome to the forum. Great to hear you've been making cheese, just curious, what's a Nigerian Dairy, is it one in Nigeria?

Hi Calgal, goat fetta is great isn't it.  You mentioned that you found that leaving it in the brine made it too salty for you.  This can be remmedied by soaking the fetta in milk for 1 hour of so before you which to eat it.  The brine helps to preserve the cheese, and kept properly should last upto 6 months or so in the fridge.  HTH

Wow, thanks for the info tea!  I can't seem to keep the feta around for much longer than a week so storage is only a problem in my tummy!! LOL.
   A nigerian dairy (thumps head) is a nigerian dairy goat dairy.  I have nigerian dwarf goats who give anywhere from two pints to a half gallon a day, depending on time of lactation.  I love my goaties.  Would love to share the milk if my state (california) would agree that I could.  *sigh* big brother is WATCHING.    My goat milk is high in butterfat--usually around 6%.  My next investment will be a separator.   Too much milk and too little time.  :-)  Lots of cheese, though.  :-)

I thought you were refering to a goat "breed" and not a place, but good to have it confirmed.
I agree, authorities are a pain in the nexk at times, but when society gets to the point that it litigates at the drop of a hat, then I get this is what happens.  We can't have it both ways, more's the pity.

A friend called to say he wanted to build me a cheese cave.  He is a refrigeration specialist.  I'm so stoked.  He said we could address both temp and humidity control!  Should be interesting!   He enjoys the cheeses and wants to help!  Its funny as he has never been able to enjoy milk products due to sensitivity to cow's milk.  Now my goat products haven't caused him any problems!  He is a really happy camper.  CG.

I will keep you informed.  He is looking into it now.  He builds/rebuilds units for grocery stores and is hoping to find a 6x6 unit for me.  Pretty cool??
