Do i need a cheese cave if i am waxing my cheese? and if it is yes where can i get a humidity/temp gauge for the cave?

Hello akoz16,
If you wax or vac bag your cheese, then you don't need to worry about humidity control. You do need a cheese cave though to keep your cheeses at the desired temp while aging.

I use a wine fridge as my cheese cave. It has just the right temp range. The only downside is that if you are making lots of cheeses you may need a full fridge with a thermostat. There are quite a few other posts that deal with this...

As for the temp/humidity Q, try googling for cheap weather stations that have a wireless 'outdoor' sensor.. Mine now sits in the blue cheese box.. And I can read it from the lounge room.
