Cream separation

This may be a deviation from the art of cheese making, but any tips on how to get the best out of our recently purchased cream separator? we ran 4 litres of milk through and got the tiniest amount of cream. We have a Jersey cross milking cow. We don't milk her out. Should we? I guess it's seasonal as to when there's going to be a higher butter fat. Info anyone?

The largest portion of cream is at the end of the milking so you probably left a lot in the bag. It would be better to milk two teats out completely and let the calf have the other two than just milking them all partially. You can also greatly increase her cream content with a richer diet. It is true that the fat content fluctuates with the cycle and seasons but you can get a lot higher than you are getting if your cow is really jersey. Good luck.
