Coffee liquer - mock Kaluha

I found this recipe on All Recipes.com and made up a batch last November. I used it to make tiramisu - a heavenly Italian dessert made with Mascarpone and ladyfingers.

Coffee Liqueur

2 cups water
1 1/4 cups white sugar
2 tablespoons fresh ground coffee beans
2 tablespoons vanilla extract
2 1/2 cups vodka

1. In a saucepan over medium heat, combine water, sugar, and ground coffee. Bring to a boil, reduce heat to low, and simmer for 10 minutes, stirring occasionally. Allow to cool, then remove grounds through a strainer. Stir in vanilla.
2. When cool, stir in vodka. Pour into a liquor bottle, and keep in a cool place.

I like to let this mellow for a week or two before using. Blended with equal amounts of cream, it makes a VERY decadent cocktail.

I made this last night.  I wanted to try it with a chocolate coffee that I get here, but wouldn't you know it, it wasn't in stock, so just used my regular coffee beans.  Vodka was on special, so extra bonus.  It is now sitting in my pantry aging.
Smells good.

I hope you enjoy it.  I used to have a recipe that used instant coffee, but I like the idea of using fresh ground coffee better.

Making this right now -- using a vanilla caramel coffee blend.  Really excited to try it!
I like the idea of "chocolate coffe" -- couldn't find any, but will keep looking!

I think Folger's makes a chocolate truffle coffee. Not best quality, not fair trade, but pretty tasty.

Gloria Jeans has a chocolate coffee, but I didn't like the bitter after taste.  The one I usually get has a beautiful aroma, and sweet smooth after taste.  I also want to try a chocolate/coffee mead.
