Making Cheddar!

I get milk fresh from the dairy,  in 5gallon bags.  They are earlier in the post.

Wayne, what recipe are you using?  You are right in that I never got the curd small enough and that they never melded together.  But that was what my recipe instructed.
Your curd has a completely different look to what mine ended up being.

It is a "stirred curd"  not a traditional cheddar.

I used to make the traditional cheddar when i make more,  but i'm not sure i make enough cheese at any one time to get a good "slab" of cheddar.  So..  I went with a stirred curd that never allows a slab to form.
thus,  I am not milling my curds either.

Something's fishy here. I can only post 4 pics at a time and Wayne gets like 50?

Looks good. Your curds are pretty.

In any one reply post you can only post 4 pics.  If you require more posted, just click on reply again, and post the rest.
Simple.  ;)

Cartier, as Tea said, I limited the picture size and number per post to somewhat conserve server space and as constraint on spammers, hope it's OK.
