I have been a pretty good boy, re: beer.  But oh, the days of having 3 on forced carbonation, and many on cask....seemed to have a lot more friends dropping by those days.... ;D

Well, pleased to report that round 2 went well.  Linux, will try it again with animal rennet next time, but had already gotten the veggie rennet for this batch; used 1/5 drop (1 tbsp of a 1drop/5tbsp solution), with 1/4tsp CaCl; 12 hour set, very nice curd, clean break.  Will look forward to FD and animal rennet - and, on getting a Craigslist reefer, a host of other cheeses, now.

Edit:  12 hours' drain, very pleased - pillowy mouthfeel, creamy, richly flavored; a good start.  Again.
