Recipe for Greek Kefalotiri cheese.

I am looking for a recipe for Kefalotiri cheese. It's a Greek hard high-salt cheese, cooked at high temperatures, highly lypolitic. Could it be done with cows milk? Any ideas? ::)

I plan on using a thermophilic mix culture :-p
