 hi there,

 I followed the 200 Easy Homemade cheeses recipe. Mine went into the humidity box on 1/9 and when I flipped last night there was lots of blue growing on one side. the book says it'll show up in 2 weeks. Do I just leave it alone to grow and prosper?
