John's Yogurt Making #2 - Yogurt Machine Method

The following is first try at using new Salton Brand Model YM-9 Electric Yogurt Making Machine and standard yogurt recipe:

RECORDS
  • Dec 30, 2008, 1:00PM: Poured 2 fluid ounces of nonfat cow's milk powder as thickener into machine, filled with store bought 1% pasteurized homogenized cow's milk from jug to 1 litre level mark. Stirred with spoon to dissolve milk powder, placed in wall type microwave.
  • Dec 30, 2008, 1:05PM: Zapped for 4 minutes, stirred with thermometer and measured 130 F, added another minute and stirred/measured 153 F, added another minute and measured 174 F, added another 30 seconds and measured 184 F, done. Placed container in machine without lid to cool (reason for timing is to be able to just type in total time to warm in next yogurt making without measuring temperature).
  • Dec 30, 2008, 1:45PM: Meaured temperature at 140 F, cooling at 44 F / 40 min = 1 F /min.
  • Dec 30, 2008, 2:15PM: Meaured temperature at 125 F, cooling at 15 F / 30 min = 0.5 F /min.
  • Dec 30, 2008, 2:45PM: Meaured temperature at 114 F, cooling at 11 F / 30 min = 0.3 F /min. With measuring cup, scooped out 1/2 cup of milk, spooned 1/2 cup Dannon non-flavoured plain active yogurt into measuring cup, stirred with spoon to dissolve, poured into large container, stirred lightly with spoon, meaured temp at 105 F (from fridge cold yogurt), turned unit on, placed on lid and cover and turned dial to 10PM as reminder to check if done.
  • Dec 30, 2008, 6:00PM: Removed lids, yogurt setting up nicely, measured temperature at 111 F / 43.5 C, perfect.
  • Dec 30, 2008, 8:45PM: Removed lids, yogurt setting up nicely, measured temperature at 114 F / 45.0 C, perfect.
  • Dec 30, 2008, 10:00PM: Removed lids, yogurt setting up nicely, measured temperature at 114 F / 45.0 C, perfect, placed in fridge after 5.25 hours baking, pulled plug on machine (no off button).
  • Dec 31, 2008, 7:00AM: Checked yogurt in fridge, has set up a little more, small normal layer of whey on cheese.

NOTES
  • Product brochure said to pre-heat the machine, I placed the container in machine to cool, assume will result in same as pre-heating.
  • Room cooling took 1 hour 40 minutes, if room cooling next time, start batch earlier in day to get longer set time before bed or make in evening to set overnight.
