I have been working on a couple of things.   

First of all, gearing up for Gouda. 

That is,  Brining.  Several test batches are underway

Secondly, my cave. Still working out the kinks in this 20 deg weather.

I have not made cheese in what seems forever.  (9 days.)

I wish I was Scottish, for one I would love to retire to the highlands, second if I had somekind of herritage I could put a coat of arms or something as an emboss in the cheese besides my name.
