What happens to a Havarti as it ages? How does the flavor change? I've managed to get Havarti down pretty well at this point, so I'll be wanting to make a bunch more just to be sure that I always have some around, but am concerned about how it might be if I lose one in the back of the cave or just don't get to it for, ya know, four months or something.
