Hi  :)
We really need to add more ageing space this coming season-we'll have 150 ewes in milk and also some cow milk-I currently have a 2x2 conventional refrigeration ageing room, it's okay but lacking in humidity a bit. I'm seriously considering using a insulated shipping container with a coolbot (or bots if needed) but I'm wondering if a room made of 2nd hand coolroom panels and a coolbot would be better.........I've had enough fun and games with equipment to last me a looooonnnnnnnggggg time and I'd like to get it pretty right on the first try. I know black sheep creamery are very happy with their container (you can see the cheese inside the container on their website) but does anyone else know of any being used successfully as ageing spaces??
