Onion, Dried - Using In Cheese Making

Hey, I made a nice colby today and for the first time added dried onion and dried chives.  It looks great, just put it into the final press.  I wondering though if I should dry this normal (for me in a cupboard in my kitchen/room temp) or should I dry in the fridge due to the moisture in the onions.
