Boofer's Cookies
« on: April 12, 2011, 05:26:42 PM »
These cookies are very satisfying with a cup of tea or coffee or a glass of cold milk, at any time of the day. They have gone through many variations, including the use of ground flaxseed and dry nonfat milk.

This latest variation swapped out the dry nonfat milk and replaced it with Red Mill dry sweet whey and dry buttermilk. I think the overall flavor got boosted. Another significant change was swapping out a 12 ounce bag of Nestle chocolate mini-morsels and replacing them with the multicolor chocolate morsels. That again upped the ante in favor of the flavor.

Depending on the length of time in the oven, the cookie can be a softer version at 12 minutes, moving through a chewy rendition with a little longer, and finally ending up as a crisp cookie at around 14 minutes. Dough size also figures into the length of baking time and the desired soft-to-crisp index. Perhaps a smaller spoonful is more attractive. Your mileage may vary.

August 2014 EDIT: I finely tweaked and adjusted this recipe. It is a tad bit healthier ::) and has a lot more character and flavor. :P

Enjoy.  8)

Let's ferment something!
Bread, beer, wine, cheese...it's all good.
