Does anyone have a good mascapone recipe that uses culture & what cultures should I use?
I'll appreciate it alot since I have alot of cream on my hands.

Gustav, I just updated the
Tartaric Acid based recipe on the website
with the one
here
using starter culture, and one using vinegar
here
