FWIW, I've done three Gruyere's now, and that what my rinds look like after 2 months.

The taste?  Divine   ;D

Boofer, probably a poor picture, but the cheese is covered with B. linens and Geo, although the linens definitely predominates. I've quit washing it, thinking I should dry it out, then maybe wax or vac. What do you think?
Knoal, how long do you age them?
