Don't have any DH. All I have is KL71, so I guess it will have to do.

I see the point about cheeses in different stages of affinage. In one of my tasting threads with "The Old Man" I showed pics of two Taleggios in a young, firm stage and the one that I bought that was soft and sticky like soft taffy.

by the way, just noticed the cheese count on my profile and remembered I forgot to say "Merci bien Paul pour le tranche de fromage. Une tranche pour vous aussi, copain!".  Working on my very rusty French but pretty sure this was correct.

Thank you kindly. Don't know why I said Une and not La... my native tongue is Hebrew and 'Slice' is female in Hebrew too. Most of the male/female objects in Hebrew are the same gender in French so usually this is one thing that I do get right.
