Since I'll be making batches of cheese within the next week or so, I've started tasting more cheese to develop a better pallet.  I tasted a cheese that I really like called Bergenost, made by Yancey's Fancy.  It is super creamy and and has a full robust flavor.

Has anyone tried this that could suggest a recipe for making something similar?
