about to start my first rennet cheese a simple cream cheese recipie found on here
1.8 mls milk
600 mls
100 buttermilk starter
3 mls renco rennet
now for the fun bit ......... :o :o

well its now 3 hours later and i have done the mixin and heating ,i just looked at my "brew" and lo and behold a curd is formed i shall leave it alone now for the time in the recipe then look again


15 hours later a nice firm curd and smells like cream cheese
now just to wait and see  ::) ::) ::)

the range hood makes a fine cheese hanging place  ;D

been hanging for 12-14 hours no more drips ,now the tast test
final result was very pleaseing has quite a creamey flavour and the texture is firm yet spreadable
might add a bit of sweet chilli sauce to some  ;D ;D

im open to suggestions(re cheese) for a first hard cheese recipe to try ,im going away for a week at the beginning of feb so when i return im ready to get stuck in to it  so any idieas.......

I recommend either a Monterey Jack or a Manchego.

I was going to suggest a monterey too.  It is really an easy cheese.  So now are you going to flavour it, or leave them plain?
