Waxed Rind - Accidentaly At Warm Aging Temp, Impact?
« on: June 30, 2011, 01:52:59 AM »
I went on vacation and while I was gone my fridge went out.  The temp of the fridge went from 55 to 70, I think it was there about a week.  The humidity was maintained at 85%.  The wax of the cheeses (a 3 week old pepper jack and a week old colby) appeared to be sweating.  Is the cheese a goner?  Should I take off the wax and see what is going on?  I put them in the crisper drawer for the time being until I figure out what to do with them.  Any thoughts

Just keep your eyes open for water under the wax, and mold growth.  It may have affected the cheese flavor wise, but you might find you like it.  Keep aging as planned.
