Hi Neil,

Tamara from 'downunder' here.

Not sure that ANYONE is out there... I was told this was THE forum for cheesemakers and I made 2 posts yesterday, hoping for some comments/advice/suggestions but had no response at all... quite disappointed!

I read your posts re your blue cheese and saw the pictures... don't know if you saw my blue post yesterday but if you have a moment, I would appreciate any thoughts you have on how to increase the mould through the cheese.

Yes, Huge amount of info... easy to get lost in it but so much wonderful advice. Nice to know there is help and guidance out there to help us newby cheesemakers on our journey.

That's right! I am indeed from South Africa. Have a dairy farm in Bronkhorstspruit, but travel to germiston, jhb etc. alot.

It's nice to have someone on the forum that's cactually  in the same country as I am.
I guess you are +- 150km from where I am. Not far at all as I travel up to 250km some days.

Hi All,

I am new to the forum and cheese making, living in Pretoria!

I  made my first Finnish squeaky cheese last night.. was a little bland but I will do it until I do it right.

This site is amazing.

At the moment I got from two stores, one in Emmarentia (The Homebrew Shop  and one in Midrand (dairy Cheret).

I have only used the goods from Dairy Cheret CC though.

I am new at making cheese so I only make the softer cheese now. I actually have a Neufchatel in the strainer as we speak.
Hope it turnes out ok!

Dairy Cheret provides exellent service from Dianne Vosloo & her colluege.

I have noticed that it's extremely cheap to buy in large quontities as to small.
Eg. 25ml Anatto colourant is R28 , but if you buy 1 Litre, it's R89 !?!?
RA21 that I use for my cheddar is R45 for 250 Litres worth of culture, but R150 for 2500 Litres worth of culture.
Rather buy like that.

Well as you say stuff is much cheaper if you buy bigger quantities, if we order in one big order and divide it up it will be cheaper for everyone! ?

The definition of bulk purchasing mentioned here isn't like buying from Trade Centre. What I mean is that you should rather pay R150 for 2500L culture instead of R45 for 250L. Does that make sense? I don't think it's neccesary to pitch together as the ingredients aren't that expensive. I have a small laboratory going on in my freezer of the amount of cultures I alreeady have. Name it, I got it. LOL
