I am just starting out on this cheese making journey. I made my first three weeks ago. I find the whole thing very fascinating. Maybe I saw the Monty Python "Cheese Sop" skit one too many times (if that's possible) or the shows on TV that show you how cheese is made but one day I got up off the couch and said "I'm going to make some cheese". Well, thee weeks later and I'm almost obsessed with it. I've been using lemon juice so far but I just got a bottle of veg rennet yesterday, oh boy oh boy.

Hi semisoft, welcome, so you've got the bug, good! You'll have some fails and some so-so's but just keep going and you will have some great cheeses!
If you search for "Monty Python" you find couple links to that video.
