A little longer turned into almost 2 years  :o

However it tastes great, quite crumbly and the dogs approve of it.

Wow!  Here a cheese to you for patience!  Excellent! update.  That's the oldest caerphilly I've seen.  And, it's nice to hear that it will age well for an extended time - as if I needed another reason to suggest caerphilly as a good cheese to learn.

What happened is that my previous job sucked all the life out of me  :'(

No cheese happened, but I just left everything as it was.
