White Stilton has no blue mold. I think it's an abomination to the Stilton name.

White Stilton does have its own heritage; it's a recognised cheese in its own right in the UK. It's crumbly and softish but solid, with quite a sharp taste and a deep after-flavour. Can't say that I prefer it over an aged Cheddar, though.
