Washed curd feta

On a whim I tossed a wheel of gouda into my feta brine to see what would happen.  It was a month old today (not legal to sell since it is raw milk, but fine for me to sample).  I must say I quite liked it. It was creamy up front in terms of flavor, with just a little bit of brine tang for the finish.  My brine is a little salt heavy at the moment, but aside from that, good flavor!  Texture was on the soft side, not the mushiness sometimes found with feta, but overall softer than my regular feta.  I will be making this again!
